Creamy Celeriac & Apple Soup: A Deliciously Nutty, Garlicky & Herby Twist

Celeriac & Apple Soup
2 x Medium Onions (Diced)
1 x Celeriac (Peeled + Chopped)
2 x Apples (Peeled + Chopped)
2 Tbsp x Olive Oil
1 ltr x Water
200ml x Milk
Salt & Pepper to taste
For the Topping
200g Crushed Hazelnuts
40ml x Olive Oil
1 x Clove of Garlic
1 Tbsp x Chopped Parsley
1. Begin by preparing the vegetables.
2. Place the olive oil into a saucepan over medium heat. Add in the onions with a pinch of salt and cook until soft.
3. Add in the celeriac and apple and cook for a further two minutes. Top up with 1 litre of water and bring to a simmer. Place the lid on and simmer for 20 minutes until the celeriac is tender.
4. Take off the heat and add in 200ml of milk. Blend until smooth and season to taste.
5. For the topping, toast the hazelnuts in a dry frying pan until golden. Place into a bowl with the olive oil shipped parsley and finely diced garlic. Mix everything together.
6. To serve, ladle the soup into a bowl and drizzle the hazelnut mix over the top.
