Sopa de tortilla is a Mexican soup that's bursting with flavours. This vegan recipe so quick and easy to make. Enjoy it warm in the winter and cold in the summer.

Ingredients:

1 28 oz can diced tomatoes
5 cups of water or vegetable stock
1 onion diced
2-3 cloves of garlic minced
1 bell pepper diced
1 poblano pepper (or roasted poblano) diced
or 2-3 jalepenos finely chopped (for more of a spicy kick)
1 zucchini grated
1 carrot grated
1 apple grated
1 cup of corn
1-2 tsp chili powder (optional)
salt & pepper to taste
sugar to taste (if too acidic)

For garnish:
Tortilla chips
Cilantro,
Avocado
Lime wedges
