In a small bowl, put the yeast with the warm milk and a spoonful of sugar. Let the yeast activate for 5 minutes. After you have activated the yeast, pour it into a larger bowl where you will make the dough, add warm water and the egg. mix, add all the sugar, salt, and flour, and knead until it becomes a homogeneous, elastic and not too soft dough! Leave the dough at room temperature for 40 minutes, then add the butter (room temperature) and chocolate flakes, knead until the butter is incorporated (you can also knead with a stand mixer. Then leave the dough at room temperature until it triples in volume. When the dough is ready, you can manipulate it and make any sweet pastry from it, for example the panneton that I made!
