Dudhi ki Sabzi Recipe

1 bottle gourd (peeled and chopped into cubes)
1 finely chopped onion
2-3 finely chopped tomatoes
Heat pressure cooker, add 2 tbsp oil, 1 tsp jeera & onion. Once it turns golden brown, add 1-2 green chillies finely chopped & few curry leaves. Cook for a minute, then add in the tomatoes. Season with salt & also a pinch of hing. Let this cook till tomatoes turn mushy & release oil. Add in 1 tsp haldi, 1 tsp red chilli powder, 1 tsp dhaniya powder and mix. Cook for a min and then add in the dudhi. Mix well, add 1- 1.5 cups water. Pressure cook for 5 whistles. Open cooker after the pressure is completely released. Turn on the flame on low and add 1 tsp garam masala powder, fresh coriander leaves and 1-2 tbsp crushed peanuts powder. Mix it and turn off the flame. Let it sit for about 5 mins. Serve hot with rice or rotis!
