What is happening friends! Welcome back to episode 5 of Manny's food channel. For this episode I wanted to make one of my favorite breakfast dish called Shakshouka, which literally means the best, most delicious breakfast/brunch meal ever created (not really), but I'm not exaggerating when I say this is such a quick, healthy and delicious way to start off your day.
INGREDIENTS
1/2 tsp Smoked Paprika
1/2 tsp Ground Cumin
1 tsp Tumeric
1 tsp Chili Flakes
1/4 cup of Olive Oil
2 Grated Garlic Cloves
2 Eggs
1/2 Roughly Chopped Onion
1 Roughly Chopped Orange Bell Pepper
4 Roughly Chopped Roma Tomatoes
Salt & Pepper to Taste
Chopped Parsley or Cilantro to Garnish
Crumbled Feta Cheese to Garnish
PREPARATION
1. In a medium pan, sweat off the onions in olive oil on medium to low heat for 5 minutes until onions turn translucent.
2. Next, add in the orange bell peppers, cook for another 5 minutes then fold in the spices and cook for another 2-3 minutes.
3.Once the onions, peppers and spices are well incorporated, stir in the chopped tomatoes and grated garlic, cover with a lid and cook until for 10 minutes or until tomatoes are completely wilted.
4. Finally, make 2 holes in the shakshouka mix, crack your eggs and cook to desired doneness.
5. Garnish with crumble feta cheese and chopped cilantro.
6. Serve with naan or pita bread and enjoy!
