🇰🇷𝗞𝗢𝗥𝗘𝗔𝗡 𝗦𝗢𝗬 𝗠𝗔𝗥𝗜𝗡𝗔𝗧𝗘𝗗 𝗖𝗥𝗔𝗕𝗦 간장게장 (𝗚𝗮𝗻𝗷𝗮𝗻𝗴 𝗚𝗲𝗷𝗮𝗻𝗴)
Made the spicy variant in a previous video (Yangnyeom Gejang) so decided to do the soy based one as well! They actually call this the rice thief because of how much rice you’ll end up consuming while eating it. I honestly prefer the spicy variant but this one was pretty good as well. It tasted like a really savory fish jello similar to scallop/uni.
*Disclaimer: Please be careful when consuming raw crabs. Make sure they are either live or flash frozen. Never use crabs that are already dead. If using live crabs, put them into the freezer for at least 2 hours to put them to sleep.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
𝗖𝗿𝗮𝗯𝘀:
- live/flash frozen blue crabs
- 1/2 cup sake
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲:
- 2 Gala Apples (sliced)
- 8 cloves garlic
- 1/2 cup Rice syrup
- Onion leek (roughly chopped/torn)
- 3 inch pc Ginger (chopped)
- 1 sheet dried kelp
- 3 cups soy sauce
- 4 green chili (chopped)
- 3 pcs bay leaves
- 7 cups water
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
- Make sure the crab you’re using is either live or flash frozen. Scrub crabs clean with a brush and separate head from body. Snip off ends from legs and remove gills. Cut crab in half and soak in sake for at least 30 mins.
- Bring ingredients for marinade listed above to a boil and let simmer for 20-30 mins. Strain and allow to completely cool down.
- Once marinade is cooled down, pour over crabs and store in an airtight container for at least 24 hours before consumption. Keep in fridge for 3 days at most but still check from time to time if they still smell fresh. There shouldn’t be any pungent odor.
- This is best served with hot rice and crispy seaweed paper 😋
