This is how I make Hechiauchang ( Fermented Soybean). Fermented Soybean is locally known as Hechiauchang in Zeme and Akhuni or Axone in Nagaland. We Naga people use the Fermented Soybean in a variety of dishes ranging from chutney and pickles , to various popular dishes like smoked pork with Fermented Soybean. Wherever you are if you want you can make it yourself, you don't have to search around in northeast shops 😊.
