Aam dal is a traditional Bengali recipe, which is enjoyed by people throughout the summer season but it is the obvious dish on the day of "Chaitra Sankranti" i.e, the last day of a Bengali year. This is eaten specially on that day along with the "neem begun ( Eggplant with neem leaves) and the recipes of shojne ( Moringa drumstick). That day is celebrated with purely vegetarian recipe. The raw mango serve the sourness to this lentil recipe so that it is called as"aam die tok dal".'tok' means sour. To balance the sourness of the raw mango this recipe contains much more amount of sugar than the other daal recipes. This amount of sugar must be adjusted according to the taste of oneself and the sourness of the raw mango ,being used in that recipe.
