SUJI HANDVA

PREP TIME:- 5-7 minutes
COOKING TIME:- 25-30 minutes
INGREDIENTS:-
* 1 cup rava
* 2 tbsp oil
* 1/2 cup chaas
* 1 tbsp ginger green chilli paste
* Salt as per taste
* 1 tsp coriander powder
* 1 tsp cumin powder
* 1/2 tsp turmeric powder
* 1 tsp red chilli powder
* 1/2 cup bottle gourd (grated)
* 1/3 cup carrot (grated)
* 1/4 cup corn kernels
* 1 tbsp sugar
* Handful coriander
* 1 tsp eno
* 1/2 lemon squeeze
FOR TADKA:-
* 3 tbsp oil
* 1 tsp mustard seeds
* 1 tsp cumin seeds
* 1 tsp sesame seeds
* 6-7 nos curry leaves
METHOD:-
* In a bowl add rava, oil and mix this well. Further add chaas mix and let it sit for 4-5 minutes.
* Add ginger green chilli paste, salt, coriander powder, cumin powder, turmeric powder, red chilli powder, bottle gourd, carrot, corn, sugar, coriander. Mix all this well.
* Add eno, squeeze lemon and mix once again.
* Now to cook the handva, set a pan on medium heat, add oil, mustard seed, cumin seed, sesame seeds, curry leaves and then pour the batter and cover it with a lid, and cook it for 6-8 minutes until cooked on one side.
* Then turn another side and cook it until it turns crispy and golden brown.
* Your instant sooji handva is ready to eat with green chutney or aachari oil.
