As a dietitian, I am often asked about snacks for prediabetes and diabetes as well as can you eat pickles with diabetes. While I have recommended some brands of pickles found in the grocery store, I really enjoy this very simple diabetes pickles recipe. Looking for a great low carb snack for prediabetes? When it comes to pickles and diabetes, I have an amazing recipe the entire family will love.

Diabetic Pickles Recipe
2 small cucumbers
½ cup water (room temperature)
½ cup rice vinegar
2 tsp Swerve
1 tsp Redmond Real Salt
2-3 sprigs of dill
2 tsp garlic

Place cucumbers in a jar.
Pour water, rice vinegar, Swerve, and Redmond Real Salt in a jar. Close. Shake.
Open the lid and add dill and garlic. Close.
Refrigerate for at least 24 hours.
Serve.
