kesar phirni | Saffron rice pudding | Indian dessert recipe | firni recipe
super delicious traditional Indian dessert . Made with coarsely ground rice, milk and sugar. Creamy with rich flavour of saffron and cardamom.
A must try for the festive season.
How to make phirni/ Indian rice pudding
Basmati rice- 1/4 cups ( 4 tablespoon)
Soak the rice for 30-60 minutes. Drain it well in a kitchen towel.
Milk- 1 litre ( 4 cups)
Sugar-6 tablespoon
salt-1 pinch
saffron- 10-15 strands ( soak for 15 minutes in 2 tablespoon of warm milk)
cardamom powder-1/4 teaspoon
Note:
1. Do not make the rice super fine. Make it a coarse powder.
2. If you don't have saffron use 1/2 teaspoon cardamom instead of 1/4 teaspoon mentioned in the recipe.
3. Stir the milk and cook over medium flame, otherwise the milk will burn.
