In this video, we show you the super delicious Chooza Chicken Recipe. Chooza Chicken is very famous in Nairobi Kenya, and is a Chicken Recipe packed full of spices and then cooked on the BBQ. The Chicken Chuzza is very tender and moist and really aromatic with all the spices.
To make the Chooza Chicken Recipe for the marinade, you will need:
3 tbs yogurt
2 fresh chilies (we used 1 red and 1 green)
3 garlic cloves
1 inch ginger
1/2 tsp garam masala
1 tsp Kashmiri red chili powder
1 tsp paprika
1/2 tsp cumin powder (jeera)
1 tsp coriander powder (dhania)
salt to taste
1/2 tsp black pepper
1/2 tsp turmeric powder (haldi)
1/4 tsp ENO salt
1 tsp vinegar
3 tbs mustard oil
fresh lime juice
Marinate the Nairobi Chooza Chicken for at least 4 hours (overnight for best results).
Apply some mustard oil and squeeze fresh lime juice before placing on the BBQ.
To make the famous Chooza Sauce that goes with this Chooza Chicken, just set aside some of the marinade mixture. Add a little water to it and let it simmer in a pan until the mixture thickens a little. You can add a little extra chili powder to it if you wish. Once it reaches the desired consistency then it is ready to enjoy with the Chooza Chicken!
The Famous Nairobi Chooza Chicken by Hashmi is made on the tandoor or BBQ, but for those who do not have access to a tandoor or BBQ then you can make it in the oven or grill. Due to the weather at the time of filming, we partially cooked the Chooza in the oven, and then finished it off on the BBQ to give it that authentic Kenyan BBQ Chicken flavour.
