It's soft, creamy and slightly chewy with coconut and pandan flavours plus a delightful hint of rose 🌹 The batter is easy to put together but steaming it is tedious as each layer of the kuih needs to be cooked one by one. Kuih Lapis (Steamed Layer Cake)
Makes a 7x7inch cake
150g pure rice flour (not blended rice flour, and not glutinous rice flour)
125g corn starch
125g tapioca starch
3/4 tsp salt
600ml water
400ml thick coconut cream, or coconut milk
300g sugar
4 pandan leaves
A few drops of red food colouring
1 tsp rose water or rose extract
