Fall is here, dear friends and can be having all the soup in the world! My all time favorite fall soup is Butternut squash soup and I’ve come to enjoy it even more now that I can whip my own up at home with this very simple and straightforward recipe. I hope you try this.
Ingredients:
1 butternut squash/ autumn squash, about 3.5-4 lb
1 large onion
4-6 sage leaves
1 tablespoon avocado oil
2 teaspoons black pepper
4 cloves garlic (use less or omit if garlic isn’t your thing)
1 cup apple cider (or juice)
3 cups vegetable broth
2 tablespoons butter
1 tablespoon maple syrup
½ ginger powder
2 teaspoons salt (or to your taste)
