Swedish Sandwich Cake Smorgastarta - Vegetarian Recipe
In this episode of Culinary Caravan, we have reached Sweden to experience the country's Smörgåstårta - a unique Vegetarian Sandwich Cake
SMORGASTARTA RECIPE
INGREDIENTS
For the Filling:
- Bread 16 slices
- Green Peas 2 tbsp
- Carrot 1 cup
- Mayonnaise 6 tbsp
- Boiled Egg 1
- Chives 1 tbsp
- Sliced Cheese 4 slices
- Cucumber 1 cup
- Salt & Pepper to taste
For the Icing and Decoration:
- Whipping Cream 200 ml
- Sour Cream 2 tbsp
- Tomato for the rosette
- Blanched Green Peas
- Mint Leaves
- Micro Greens
- Green Onion
METHOD
1. Prepare the Carrot Salad for one of the layers of the sandwich by mixing together peas, grated carrots, 2 tbsp mayonnaise, salt & pepper. Set aside.
2. Prepare the Egg Salad for another layer of filling by mixing together chopped boiled eggs, chopped chives, 2 tbsp mayonnaise, salt & pepper. Set aside.
3. Prepare the Icing by mixing whipped cream with sour cream. Lightly salt the icing. Set aside.
4. Prepare 16 slices of bread by removing the crusts.
5. Assemble the sandwich as shown in the video, with alternating layers of 4 slices of bread and filling. First and last layers will be bread.
6. Cover the sandwich cake evenly with icing on all sides. Use an off set spatula to smooth out the surfaces and corners.
7. Decorate the sandwich cake as shown in video or as per your imagination!
