Vardabit
Servings: 2-4
Difficulty: Easy
Prep Time:3 minutes
Cooking Time: 5 minutes
1/2 stale ramadan pide, diced, any stale bread would do great
1 cup tahini,
3/4 cup boiled beans water (aquafaba)
1 tablespoon savoury yoghurt, optional
1 lemon juice
2 tablespoons vinegar
1 teaspoon ground cumin
4 garlic gloves, grated
1 teaspoon salt
600 gr boiled beans, around 2,5 cups
2,5 tablespoon butter or olive oil
1 tablespoon olive oil
A good pinch of red pepper flakes
6-8 sprigs parsley, chopped
- Place 1,5 tablespoon butter in a large pan, add the pide bites in when the butter melted. Heat on low heat until they get brown and crispy.
- Boil the aquafaba in a small saucepan.
- Take 2 tablespoon of the boiled beans in a bowl and mash them. Add the tahini, aquafaba, yogurt, lemon juice, vinegar, salt, cumin, garlic in and mix.
- Add the rest of the beans into the mixture and give it a last mix.
- Place the bread on a dish. Top with the bean mixture.
-Sprinkle the parsley.
- To make the butter sauce, melt 1 tablespoon of butter in a small sauce pan. When butter sizzles, take the pan from the direct heat and slowly shake to form a foamy texture. Add red pepper flakes and shake again, this way pepper won’t burn and give its colour to the butter.
- Finally pour the red butter on top and enjoy!
