How to make Blueberry Syrup

Today I'm making a Blueberry Syrup for pancakes, ice cream desserts and more. It is super easy and fast to make. Water bath or steam canning it makes it shelf stable. How to make Blueberry Syrup
6 1/2 Cups fresh (or frozen) blueberries
6 3/4 cups granulated sugar
2 Tablespoons bottled lemon juice
cold water

Place the blueberries and lemon juice in a pot with tall sides. Cook on stove top until juice begins to release from the berries. Stir to keep from sticking to the pan.
Put berries and juice through a food mill, or use a cheesecloth and strainer to drain the berries. If using a cheesecloth, be sure to allow berries to cool slightly to be able to handle them, you will need to drain them, then squeeze the cloth to extract all the juice. Throw away the berry pulp and reserve the juice.
Measure juice,. adding cold water if needed to obtain 4 1/2 cups. Return this to your pan and return to stovetop.
Add sugar to the juice and bring to a boil stirring constantly. When at a rolling boil, (one which you cannot stir down) set a timer and boil 1 minute. Stir constantly.
Remove syrup from the stove and fill pint or 1/2 pint jars.
Process both sizes at 10 mins whether water bath or steam canning following directions for the canner type you choose. (see video for complete step by step instructions)
Remove jars from canner and place on a towel on counter and leave for 12 to 24 hours to seal.
check seals and remove rings, label and store in a cool dry place.
