Humba is a Filipino braised pork dish.. Isa ito sa mga paboritong pagkain na unang hahanapin kapag mayroong okasyon mapapa Fiesta, Birthdays at iba pa..Napakasarap at subukan niyo itong Humba Bisaya Recipe at siguradong babalik balikan!
Ingredients
1 kg pork belly
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vinegar
6-7 cloves garlic
1 big onion
1/4 cup soy sauce
1/4 cup sugar
3 bay leaves
1/2 tsp crushed pepper or 2 tsp peppercorns
1 cup pineapple juice
2 cups water
1/4 cup vinegar
1/4 cup dried banana blossoms ( rinsed )
2 tbsp black beans ( liquid drained and rinsed )
2 stalk spring onions
Instructions
* Place pork in a pan, season w/ salt pepper and vinegar
* Cover and bring to boil
* Stir occasionally until liquid completely dry
* Render oil from pork fat
* Once the oil is rendered and the pork is lightly brown
* Remove from pan, set aside
* Remove some of the oil
* Saute garlic and onion
* Put back the pork in the pan
* Add the soy sauce, sugar, pineapple juice, bayleaves and pepper
* Mix, cover the pan and simmer until sauce thicken
* Add water and continue simmer, stir occasionally
* After 40 minutes, add the vinegar do not put the cover.... let the vinegar cook without stirring for about 3-4 mins
( so that the strong smell and taste of vinegar will evaporate)
*Cover the pan and cook until pork is very tender, add water as needed
* Once the pork is tender, add the black beans, dried banana blossom and spring onions
* Cook for another 10 - 15 minutes and its done!

Note: Cooking time is 1hour and 10 mins just extend cooking time if you want your humba really tender ( lata in bisaya )
