Recipe:
Mai Tai (Royal Hawaiian 1971)
1oz (30ml) Demerara Rum
1oz (30ml) Jamaican Rum (dark)
1oz (30ml) light Rum
1oz (30ml) Pineapple Juice
1oz (30ml) Orange Juice
.5oz (15ml) Lime Juice
.25oz (7.5ml) Simple Syrup
.25oz (7.5) Orgeat
.25oz (7.5ml) Orange Curaçao
.25oz (7.5ml) Lemon Juice
Garnish with mint sprig, sugar Cane Stick and pineapple spear
Garret Richard's Mai Tai:
1 1/2oz Chairman's Reserve Saint Lucia Rum
3/4oz (22ml) Coruba Dark Jamaica Rum
1 Tsp Grand Marnier
1 Tsp Clement Creole Shurbb
1oz (30ml) Acid Adjusted Pineapple Juice
5/8oz (18ml) Orgeat
5 Drops Saline Solution (20% Solution)
Spent Lime Wedge for Shaking
Garnish Mint Sprig Pineapple Wedge
To Make Acid Adjusted Pineapple Juice:
Start with 100ml Fresh Pineapple Juice and add 3.2g Citric Acid and 2g Malic Acid
Shake to combine
