THINGS YOU MIGHT NEED TO KNOW BEFORE YOU START​
Use Soft Water, in other words, use boiled filtered water.
If brewing for more, 3g x No. of People is a general guide.
Warm your tea set to avoid sudden temperature drop, which will affect the steeping temperature.
Smell your warm tea leaves as we taste with our nose too.

Steps:
1. Pour boiling water into the desired number of tea cups. Wait 5 minutes or until the water cools down to optimal temperature of 70-80°C. This process helps warming up the tea set.
2. Add 5g of tea (equivalent to 1 teaspoon) to the teapot.
3. Slowly transfer the hot water from the teacup(s) to the teapot.
4. Cover with lid and wait for 1 minute to allow the tea leaves to open up. (*see recommended waiting time for the first brew of each tea)
5. Pour the tea into a teacup, a little at a time, so that the thickness and flavour are evenly distributed.
6. Do not forget to pour until the last drop which has the strongest umami. Also, never leave any hot water in your tea pot because that will cause the second brew very bitter (you would not appreciate it.)
