Joojeh Kebab
Good day, friends. This is 1 of my favorite Persian dishes that comes always in our menu.

Ingredients:
. 1 kilo boneless chicken thighs..cut into 2-3 inches pieces
. a good pinch of saffron threads
. a pinch of sugar
. 1/2 glass of hot water
. 2 sliced yellow onions
. 2 teaspoons salt
. 1/2 teaspoon white pepper powder
. 1/8 teaspoon chilli powder
. 1/4 glass lime juice
. 4-5 tablespoons olive oil
. 4 tomatoes
How to:
. Grind a good pinch of saffron and a pinch of sugar fine. Add hot water and let it bloom for 5-10 minutes.
. Pour the saffron water in bowl of chicken, mix and let it marinate for 30 minutes to absorb the taste and color of the saffron.
. After 30 minutes, add the onions, salt, white pepper, chilli powder,
lime juice and the oil. Give it a good mix then cover and let it marinate in the mixture for minimum 4 hours in the refrigerator.
.After 4 hours, thread 5-6 chicken pieces with the same sizes through the flat and narrow metal skewers. I made 6 skewers.
Put the tomatoes through the skewers as well.
. Prepare your grill while letting the chicken lessen it's cold temperature.
. When the coal are ready, put the skewers on top of the grill making sure that the meat does not touch the coal.
. Seal each side of the chicken for 2-3 minutes. After the meat are sealed grill it further for 8-10 minutes or until it is done, turning each side every after 1 minute. Grill the tomatoes as well. My grill temperature is medium low.
. The chicken is ready when the meat becomes white and the juice runs clear if you cut it.
. Serve this joojeh kebab with Persian saffron rice, salads, sliced lime or lemon and some use sumac.Enjoy your meal.
