WEDNESDAY
SHASHLIK PLATTER
Ingredients
Chicken boneless ½ kg
Ginger garlic paste 1 tsp heaped
Mustard paste 1 tsp
Chili powder 1 tsp
Salt 1 tsp
Ketchup 4 tbsp
Oil ¼ cup
Onion 2
Tomatoes 2
Capsicums 2
Worcestershire sauce 2 tbsp
Fried rice 2 cups
French fries fried 1 ½ cup
Barbeque sauce ¼ cup for brushing
Ingredients for Barbeque Sauce
Onion finely chopped ½ cup
Green chilies 3 finely chopped
Apple 1 small
Banana 1 small finely chopped
Oil ½ cup
White vinegar ¾ cup
Chili powder 1 tsp
Ketchup ½ cup
Salt ½ tsp heaped
Sugar 2 tbsp heaped
METHOD FOR BARBEQUE SAUCE
Heat oil, add chopped onion and green chilies, when golden brown add your grated apple and chopped banana, fry for 2 mins, add white vinegar, chili powder, ketchup, salt, sugar, cook for 5 mins, then blend, before using barbeque sauce, you can add fresh cream 2 tbsp, if liked.
METHOD FOR SHASHLIK
Cut boneless chicken into cubes, marinate with all the given ingredients, leave it for 2 hours, now put them on skewers alternating with veggies, first put onion, tomato, chicken, then capsicum, onion, chicken, then tomato, onion, chicken and repeat. Heat ¼ cup oil on a tawa, put the skewers and fry on each side, sprinkling with Worcestershire sauce about 1 tbsp on each skewers, after a while brush with prepared barbeque sauce, when chicken tender remove.
TO ASSEMBLE
Spread salad leave on one corner of your platter, top with rice mould, French fries on other side of your platter, barbeque sauce in small bowl, shashlik skewers in the center, serve immediately.
ITALIAN TOMATO CHOWDER
Ingredients
Chicken tikka chunks 1 packet
Oil for frying
METHOD
Heat oil and fry chicken tikka chunks, and keep aside.
Other Ingredients
Mushrooms sliced 2 tbsp
Egg noodles boiled ½ cup
Carrot ½
Cabbage very finely chopped 2 tbsp
Spring onion leaves finely chopped 2 tbsp
Parsley finely chopped for garnishing
Peas 2 tbsp boiled
Tomato paste 2 tbsp
Ketchup 2 tbsp
Chicken stock 4-5 cups
Grated cheese 2 tbsp for topping
Cream 1 tbsp for garnish
METHOD
Heat chicken stock, add in all the chopped vegetables, mushroom, boiled noodles, peas, tomato paste, ketchup, let the soup cook till vegetables tender, lastly add in the deep fried chicken tikka chunks, add grated cheese and chopped parsley, serve garnished with cream 1 tbsp, you can serve this soup as a clear soup or thicken with corn flour paste.
GRILLED LAMB CHOPS
Ingredients
Lamb chops ½ kg about 8 chops
Salt 1 tsp
Mustard powder 1 ½ tsp
Garlic finely chopped 1 tbsp
Worcestershire sauce 3 tbsp
Oil ¼ cup
Black pepper 1 tsp
White pepper ½ tsp
Chicken powder 1 tsp heaped
Water 1 cup
Mashed or baked potatoes to serve
METHOD
Flatten Lamb chops, marinate with all the given ingredients for 6- 8 hours. Heat oil in a pan, add marinated chops, fry for 5 mins on each side till golden, add in water with chicken powder, cover and cook on very low flame for 1 hour till chops tender, serve garnished with parsley, mashed potato or baked potato.
