For this recipe I purchased a Whole Untrimmed Beef Tenderloin. Doing this will save you a little money per pound and gives you a ton of great meat for some awesome burgers!

We removed the tenderloin from the package and pat it dry. You can feel the seems with your hands and easily remove the chain and other muscles that are not part of the inner tenderloin. Once removed, I simply removed the silver skin to expose all of the beautiful meat of the beef tenderloin.

For the salt brine, I seasoned the entire surface of the beef tenderloin with a good course ground sea salt. Placed it on a cooling rack and in a sheet pan in the fridge. I allowed the beef tenderloin to stay in the fridge for about 12 hours.

After 12 hours, I removed the beef tenderloin from the fridge and allowed it to come up to room temp. I applied a good coat of "Sully's Grill Dust" on all surfaces. This rub has a great grill flavor and really adds some good dark color that looks great on a perfect cooked piece of beef!

For this recipe, we kept it simple and fired up the Grilla Grills Silverbac with some Bear Mountain BBQ Bold Pellets. We set the temp at 225 for the first 45 minutes and then cranked it up to 300 to finish the cook. We removed the beef loin from the pit once it hit 120 degrees internal on the ThermoWorks DOT. Drizzled a little butter over the top and let it rest for 25 minutes.


This Beef Tenderloin hit all the flavor notes and turned out great!
