Ingredients for the filling:
2 medium sweet potatoes
2pcs shallots
2pcs garlic
1 inch piece of ginger
handful coriander stalks
2tsp mustard seeds
2tsp fennel seeds
2tsp cumin seeds
1tsp ground turmeric
black pepper & salt to taste
olive oil
Sub ingredients:
8 tortillas (6 inch)
sriracha sauce
tomato sauce
plant-based mozzarella cheese
ℹ️ Cooking suggestions:
You can make it with regular potato instead of sweet potato if you prefer. Also you can add sweet corn, peas and any other vegetables you like.
Sweet potatoes can be cooked in a pot, instead of steaming.
