Pavlova with lemon curd is a perfect dessert because it is so easy to make at home. It's so light! I bet you can have them anytime you like. The texture is crispy and chruncy on the outside/ around the edges but a soft marshmellow texture on the inside. Having pavlova with lemon curd filling is just a perfect combination. When you have a bite you wouldn't stop and would ask for more!
Ingredients
For the pavlova:
- 4 egg whites (room temperature)
- 3/4 cup superfine sugar
- 1 tbsp corn starch
- Zest of 1 lemon
- 1 tbsp fresh lemon juice
For Lemon Curd:
- 4 egg yolks
-1/2 cup sugar
- 120 ml lemon juice
- Zest of 2 lemons
- 80 gr butter, softened
Topping:
- 3/4 cup heavy cream
- Lemon zest
- Toasted almond flakes
