Chocolate Pie
Ingredients for Crust
Digestive biscuits crushed 2 cups
Melted butter 3 ½ ounce
Sugar 2 tbsp
Ingredients for Filling
Cream cheese 200 gm
Cream cheese cubes 4
Caster sugar ¾ cup
Almonds essence ½ tsp
Toasted flaked almonds ¾ cup
Chocolate chips ½ cup
Whipped cream 1 cup
Gelatin 1 tbsp heaped dissolved in ¼ cup water
Whipped cream ½ cup for decoration
METHOD FOR CRUST
In a bowl mix together mix together biscuit crumbs, melted butter and sugar, mix, press onto bottom and sides of a 9 inch pie plate, chill for 15 mins.
METHOD FOR FILLING
In a bowl mix together cream cheese, cream cheese cubes, caster sugar and almond essence, beat well, add in dissolved gelatin, fold in toasted almonds, chocolate chips, fold in the whipped cream, mix well, spoon filling into chilled crust, spread evenly, refrigerate for 4 hours until set, decorate with cream and serve.
Chicken Sandwich
Ingredients
Boneless chicken breasts 2 flattened
Salt 1 tsp each
Black pepper 1 tsp each
Paprika 1 tsp each
Egg 1
Milk ¼ cup
Water 2 tbsp
Flour ½ cup
Wheat flour ¼ cup
Dry milk powder 1 tbsp
Sugar 1 tsp
Baking soda ¼ tsp
Mustard powder ½ tsp
Pickled cucumber cut into slices 8-10
Burger buns 4
Butter softened 2 tbsp
Tomato 1 cut into slices
Cheese slices 4
Fresh fries for serving
METHOD
Cut the breast into half horizontally to make 4 thin pieces, flatten, marinate with salt, pepper and paprika ½ tsp each. In a bowl beat egg, milk, and water. In another bowl mix both the flour, powder milk, sugar, baking soda, mustard powder, remaining salt, pepper and paprika, dip chicken in egg mixture then in flour mixture, deep fry in fry pan until golden brown about 3 mins on each side. Heat buns, spread with butter and spread 2 slices of pickled cucumber, top with fried chicken, cheese slice, tomato slice, top with bun, serve immediately with fries.
Potato Salad
Ingredients
Potatoes peeled cubed and boiled ½ kg
Mayonnaise ¾ cup
Onion finely chopped 1 tsp heaped
Mustard paste ½ tsp heaped
Vinegar 1 tbsp
Carrot shredded 1 tbsp
Sugar 2 tbsp
Salt ½ tsp
Pepper ¼ tsp
METHOD
In a medium bowl combine all the ingredients together and mix well, add in boiled potato cubes, mix to coat well, cover and refrigerate for few hours before serving for better taste, serve chilled.
