The Chick pea stew called Revithada in Greek is the most renowned lentil in the cuisine of the Greek islands and one of the most famous dishes of the Cycladic island of Sifnos. An island with a rich culinary history.
Revithada is a thick rustic stew suitable for vegans and fasting with chickpeas and a few other ingredients! Her secret: it's cooked very slowly in a clay pot with a lid (Skepastaria in Sifnos) until the chick peas are almost melted together with the onions and bay leaves.
Until today, its traditional cooking has not changed in Sifnos. So let’s learn together how to prepare this beautiful dish!

INGREDIENTS
Ingredients for soaking the chickpeas:
300 gr / 10.5 oz Chickpeas (dried)
1 lt. or 4 cups Water
1 tsp. Baking Soda
Ingredients for the chickpea stew:
The soaked chickpeas
2 Medium Dry Onions
2 Garlic Cloves
2-3 Bay leaves
2 tsp. fresh Rosemary, leaves only
Olive Oil
Salt and Ground Pepper
Garnish: Juice of 2 lemons

Ρεβιθάδα Σιφνέικη

Η Ρεβιθάδα είναι το πιο γνωστό όσπριο στην κουζίνα των ελληνικών νησιών και ένα από τα πιο διάσημα πιάτα της Κυκλαδίτικης Σίφνου. Ένα νησί με πλούσια μαγειρική ιστορία.
Η Ρεβιθάδα είναι ένα παχύ, ρουστίκ φαγητό, κατάλληλο για βίγκαν και για νηστεία φτιαγμένη με ρεβίθια και πολύ λίγα άλλα υλικά! Το μυστικό της: μαγειρεύεται πολύ αργά στη γάστρα (στη Σίφνο ονομάζεται σκεπασταριά) μέχρι να λιώσουν σχεδόν τα ρεβίθια μαζί με τα κρεμμύδια, τα σκόρδα και τη δάφνη.
Μέχρι σήμερα, η παραδοσιακή μαγειρική της Ρεβιθάδας δεν έχει αλλάξει στη Σίφνο. Ελάτε λοιπόν να μάθουμε μαζί πώς να ετοιμάσουμε αυτό το υπέροχο πιάτο!

ΥΛΙΚΑ
Υλικά για το φούσκωμα των ρεβιθιών:
300 γρ. / 10,5 oz Ρεβίθια (ξερά)
1 lt. ή 4 ​​φλιτζάνια Νερό
1 κ.γ. Μαγειρική Σόδα
Υλικά για τη Γάστρα:
Τα μουσκεμένα ρεβίθια
2 Κρεμμύδια μεσαίου μεγέθους
2 σκελίδες σκόρδο
2-3 φύλλα Δάφνης
2 κ.γ. φρέσκο Δενδρολίβανο, μόνο το φύλλα
Ελαιόλαδο
Αλατοπίπερο
Χυμός από 2 λεμόνια (στο τέλος)
