Ann’s Andes Mint Chocolate Chip Ice-Cream
FOR 1 ½ QUART ICE CREAM MAKER
INGREDIENTS:
2 eggs
1 cup granulated sugar
1 ½ cup heavy whipping cream
1 ¼ cups whole milk
2 tsp. vanilla extract
1 ½ tsp. mint extract
1 small package of Andes Mints – chopped
1 4 oz. Semi-sweet chocolate bar – chopped
DIRECTIONS:
In mixer with whip attachment, beat the two eggs until lemon colored – about 2 minutes. Gradually add the sugar and beat a minute more. Add whipping cream, vanilla and mint extracts and mix thoroughly. Add the whole milk last.
Pour ice cream mixture into the ice cream machine and freeze per directions – about 30-35 minutes. Meanwhile put container for the ice cream in the freezer to get very cold. Remove to put in ice cream and gently fold in the chopped Andes Mints and chocolate bar. It will be a soft ice-cream and will need to ripen for at least 3 hours before serving.
