Sticky rice mango is a popular Thai dessert. Soft, sweet sticky rice smothered with creamy silky sweet coconut sauce, then topped with sweet juicy mangoes. It’s super easy to make with rice cooker method on your table less than 30 minutes!
No need to soak the rice.
Recipe serves 2-3
For the rice:
1 Cup old glutinous rice or Thai sweet rice
1 Cup water
The coconut syrup is for rice mixture
1/2 Cup coconut milk
1/2 Cup sugar
1/2 Tsp salt
The coconut sauce is for topping
1/2 Cup coconut milk
1-2 Tbsp sugar
1 Tsp rice flour or 1/2 tsp corn starch
1/2 Tsp salt
Add more or less sugar as you like.
Serve immediately after the rice is mixed with coconut syrup. Leaving it in the rice cooker will get dried or mix just before serving. No need to cover and rest like the traditional recipe.
