00:15 The Too-Easy-To-Be-True Sourdough Starter Pancake
Ingredients
- Sourdough Starter
- Neutral oil or butter
- Extra delicious mix-ins
Method
- Get pan really hot
- Add a bit of neutral oil or butter
- Add sourdough discard and top with any additional ingredients
- Wait for the pancake to get nice and puffy and cooked all the way through
- Flip and wait for the otherside to be cooked
- Remove and eat immediately
Variations
- Scallion, Sesame
- Sesame, tahini and honey
- Blueberries or Raspberries
- Bananas and peanut butter
- Avocado and cilantro
- Yogurt, Zaatar and olive oil
00:47 - The Slightly-More-Effort-But-Definitely-Worth-It Flatbread
01:00 Ingredients
- 250 g / 2 rounded cups of Flour
- ½ teaspoon baking powder
- ½ teaspoon sugar
- 1 teaspoon salt (or 2 teaspoons if you’re using kosher
- 200 g / almost a cup of yogurt
- 100 g of starter
01:50 Method
- Mix together flour, baking powder, sugar, salt.
- Add yogurt and starter and mix until all combined - will be quite sticky
- Knead onto floured surface adding more flour as you go until it’s totally smooth
- Cut into four pieces and let rest for at least 15 minutes
- Squash out into as even a shape as you can get it or roll it out with a rolling pin / wine bottle
- Heat pan until very hot and add a small amount of oil
- Once oil shimmers add flattened piece of dough and wait for it to puff up and get brown on the bottom.
- Flip and wait for the other side to get nicely golden brown
Serving suggestions
- Treat it like naan bread and dip it in your favourite curry or stew
- Use as a dough for mini-pizzas
- Serve it with appetizers as a vehicle for dips
- Spread it with yogurt and top with chickpeas
