↠ Fiesta Black Bean + Corn Salad
Serves 4
1 15oz can of black beans
1.5 cups corn
1/2 pint cherry or grape tomatoes, halved or quartered
1-2 tbsp of cilantro, chopped
1 scallion, chopped
1 lime
1 tbsp olive oil
2 big pinches of sea salt
Rinse and drain the black beans and transfer to a large bowl. Add the corn, tomatoes, cilantro, and scallion.
Then mix the juice of one lime, olive oil, and sea salt in a small container with a lid by shaking it. Pour over the veggies and toss. Don't over-mix or the beans might get mushy. Season with extra salt and pepper if desired.
Serve with the Potato Taquitos or add this to your favorite mixed green salad, taco salad, nachos, burrito, or tofu scramble recipe!
