WRITTEN RECIPE:
INGREDIENTS:
For bombay biryani masala-
-Saunf (Fennel seed) 2 tbs
-Safaid Zeera (White Cumin seeds) 2 tbs
-Dar chini (Cinnamon) 1 tbs
-Badi elaichi (Black cardamom) 3-4
-Sabut kali mirch (Black peppercorns) 1 tbs
-Hari elaichi (Green cardamom) 12-15
-Jaifil (Nutmeg) 1
-Badiyan phool (Star anise) 1 tsp
-Shahi zeera (Black cumin seeds) 2 tbs
-Javatri (Mace) 4
-Namak (Salt) 2 tbs
-Laung (Cloves) 1 tbs
-Aalo bukhara (Dried plums) 8-9
-Haldee (Turmeric stick ) 1
-Tez paat (Bay leaf) 4-5
-Filfil (long pepper) 2 stick
-Dhania seed (Corriander seed) 3 tbs
-Moti lal mirch (Red chilli balls) 11-12
-Methi (Fenugreek leaves) 3 tbs
-Kachri Powder (Cucumis Pubescens powder) 2 tbs
For Gravy-
-Chicken 1kg
-lal mirch powder( Red chilli powder) 1/2 tbs
-Salt a pinch
-Dhai (Yoghurt) 6 tbs
-Adrak lehsan paste (Ginger garlic paste) 4 tbs
-Dhania pani ka paste (Corriander leaf paste) 2 tbs
-Tamatar (Tomato) 3 Large sliced
-Hari mirch (Green chilli) chopped 2 tbs
-Prepared bombay biryani masala 3 tbs
For Layering-
-Pyaz (Onion) Fried to garnish
-Podina (Mint leaves) handful
-Hara dhania (Green coriander) handful
-Green chili (Green chili) 3-4
-Dahi (Yogurt) 1 cup
-Zarde ka rang (Food color) 2-3 pinch
-Chawal (Rice) Boiled
-Ghee 1 tbs
-Kewra Water 1 tbs
DIRECTIONS:
For Biryani Masala:
-In spice mill,add white cumin seeds, cinnamon stick,black cardamom,black pepper corns,green cardamom,cloves,nutmeg,staranise,black cumin,fennel seed, corriander seed,turmeric stick and mace, grind to make a coarse powder.
-In grinded powder,add 2 tbs salt, fenugreek leaf, dried plums, cucumis and mix well.Biryani masala is ready and set aside.
-Store in a closed container, shelf life is upto 3-4 months
For Gravy:
-In a bowl,add chicken, bombay biryani masala, red chilli powder, salt ,yoghurt, ginger garlic paste, Corriander leaf paste.
-Mix and marinate for half an hour.
-In a wok ,add marinated chicken, tomato, 2 tbs of yoghurt, marinated chicken water and mix
-Let it cook ttill gravy thickens.
-Now add green chili and mix.
For Layering:
-In gravy,add fried onion,mint leaves,green coriander,green chili,yogurt,food color,boiled rice, cover and cook on low flame for 15-20 minutes.
-Bombay biryani is ready.
