I made this little video tutorial on how to sharpen my knives, the knife I sharpened has the kohetsu HAP40, the degrees used for sharpening were indicated to me by the cutlery who sold me the knife..
(the sharpening technique I use is the same as for knives with a symmetrical edge, but in this case it is a-symmetrical and I have to use 2 different angles, obviously I don't pretend to be precise but at least get as close as possible)
