Because earl grey taste good in everything!
P.S: Please forgive our not-so-perfect rolling of the cake, we are still learning! But taste wise, let’s just say my family devoured this within 2 days :D

• Roll Cake Ingredients:
3 eggs
Cake flour 60g
Caster sugar 20g
Milk 60g
Vegetable oil 25g
Earl grey powder/ tea leaves 8g
Pinch of salt
Meringue (3 egg white + caster sugar 30g)
• Whipped Cream Ingredients:
Whipping cream 200ml
Sugar 20g
Earl grey powder/tea leaves 6g (optional)
• Recipe
1. Preheat oven to 180°C.
2. Cream the egg yolks and sugar.
3. Add vegetable oil in while whisking.
4. Add milk and mix well.
5. Sift the flour, salt and earl grey powder in and mix it.
6. Make the meringue by whisking the egg whites and gradually adding sugar in till the mixture hits soft to medium peaks.
7. Gently fold the meringue into cake batter.
8. Pour batter into cake pan and tap the pan on the table to get rid of air bubbles.
9. Bake at 180°C for 15 minutes.
10. Remove from oven and let cake cool.
11. Make the whipped cream by whisking whipping cream and sugar till soft peaks.
12. Spread whipped cream onto cake and roll the cake.
13. Refrigerate cake for at least an hour before cutting it.
