The technique involves using the F6 Loop:
Press F6 to get to the sheet tabs
F6 again to task pane(s)
F6 again to status bar
F6 again to Ribbon
F6 again to Split Window
From the worksheet, F6, Shift+F10 to open right-click menu, arrow to rename, Enter
Type Name, Enter, F6 until you are back in the worksheet

As much as I love keyboard shortcuts, I have to admit, I struggled with this one. But after some trial and error, I discovered the "F6 Loop" - a series of keyboard shortcuts that will take you to different areas of Excel, including the sheet tabs.
To start the F6 Loop, simply press F6 while in the spreadsheet. This will take you to the sheet tabs, where you can use the arrow keys to select the tab you want to rename. Then, press Shift+F10 to open the right-click menu, and use the arrow keys to select "Rename". Type in the new name and press Enter. Keep pressing F6 until you're back in the worksheet. And just like that, you've renamed a sheet without using the mouse.
But the F6 Loop doesn't just stop at the sheet tabs. It also takes you to the task panes, the status bar, the ribbon, and even to another window if you have a split window.
