To prepare 1kg of Cottage Cheese I use:
5 liters of milk
1 cup of buttermilk or soured cream
salt
pepper
spring onion - optional
In this video I am showing how I make cottage cheese from milk using the fermentation process. Fermentation gives the cheese a beautiful tangy taste😋
Method for 1kg of cottage cheese:
*Pour 5 liters of fresh milk into a big pot
*Add 1 cup of buttermilk or soured cream into the milk and stir well.
*Cover the pot with the lid and leave it in a warm place for about 12 hours (overnight)
*After 12 hours check if curd has developed in the milk. Use a spoon like I did in the video. Let it rest for longer if curd didn't develop properly, sometimes it takes a bit longer especially during colder months.
*When it's ready, place the pot on the stove and start heating on the lowest setting.
*Cut the curd using a long knife or just break it into 2 inch cubes using a spoon.
*Do not stir the curd
*Cook for about 30 - 60 minutes
*Check the temperature in the center of the pot. You will notice that at this stage whey will start to separate from the curd and that the whey temperature is higher than the curd temperature.
*Once the curd temperature reaches 40°C / 105°F kill the heat and cover the pot. (whey temperature will be around 70°C / 160°F at this point)
*Let it cool down for 3 hours
*Start straining it using cheesecloth like I did in the video.
*Collect whey into a separate pot. Then transfer it into the bottles and keep in the fridge. Drink it cold or use it for baking.
*Twist the cheesecloth to create light pressure on the curd. Cover with a plate or bowl and place in the fridge to strain for 2-3 hours.
*Transfer your homemade cottage cheese on the plate and share with friends and family.
*Store it in the airtight container in the fridge.
Once your Cottage Cheese is ready you can slice it and eat it with your favorite bread or you can mix it with soured cream, yogurt or mayo, add salt, pepper and spring onions to try something even better.
