Ingredients:
- footlong French baguette
- 5 slices fresh mozzarella
- 1lb ground beef
- 1lb ground pork
- 2 eggs
- 1/2 cup bread crumbs
- 1/2 cup parmesan cheese, grated
- 6 cloves garlic, minced & split into 2 equal portions
- 1/3 cup fresh parsley, (leave 1tbsp for garnishing)
- 5-6 large basil leaves, julienned
- 1/2 yellow onion, diced
- 1 28oz can whole San Marzano tomatoes
- 1tsp garlic powder
- 1tsp dried oregano
- 1/2tsp crushed red pepper, optional
- salt & pepper to taste
- 2tbsp olive oil
Directions:
Meatballs-
Preheat oven to 400F. In a large bowl, combine the pork, beef, eggs, bread crumbs, parmesan cheese, parsley, 3 cloves minced garlic, good pinch of salt, and black pepper. Mix until all ingredients are well incorporated. Using an ice cream scooper or your hand, form golf ball size meatballs and place onto a plate. Next you'll need to sear the meatballs in a pan over medium high heat for 1 minute on each side until golden brown. Remove from pan and place onto a sheet pan. Finish cooking the meatballs in the oven for 20-25 minutes.
Marinara Sauce-
Dump the San Marzano tomatoes into a medium bowl and crush with your hands until only small chunks of tomato remains. Heat a sauce pan over medium high heat with olive oil. Sautee onions and the other 3 garlic cloves, until onions are translucent. Add the tomatoes and reduce heat to a simmer. Add the fresh basil, garlic powder, oregano, chili flakes and mix well. Season with salt and pepper until desired taste. Cover with a lid a let simmer for at least 20 minutes, but the longer the better!
Assembly-
Slice baguette opened, but DON'T CUT ALL THE WAY THROUGH!!! Take the cook meatballs and dunk them into the marinara sauce and place about 6 or so meatballs onto the baguette. Top with more marinara sauce and the slices of fresh mozzarella. Place the meatball sub onto a sheet pan and in the oven on broil until the cheese is bubbly and melted. Remove from oven and garnish with the remaining fresh parsley.
