“SPANISH BREAD” is a popular Filipino bread filled with breadcrumbs/butter/sugar mixture, drenched in bread crumbs... Nowadays, people tend to explore a bit more and they even use Ube Halaya and Cheese filling! (That’s me!)
Today, I just baked a very soft, fluffy and yummy SPANISH BREAD... And because I ran out of the filling midway, I found a leftover Ube Halaya and Cheese inside the fridge, so why not experiment and be creative at the same time 😉
And of course, still sharing my secret ingredient in all my bread recipes, “1 Potato (peeled, boiled, mashed and sieved), it just makes your bread softer and fluffier!

Spanish Bread Recipe
A) Prepare/Activate the Yeast, wait for it to bubble for 5-8mins
3/4 cup warm water
2 packets Dry Yeast
1 tbsp sugar
B) Mix all ingredients in a Kitchenaid mixing bowl,
5 1/2 cups bread flour or plain flour
5 eggyolks
1 cup milk
3/4 cup sugar
1/2 cup softened butter
1 tsp salt
1 boiled potato (100gr) mashed and sieved
and your Yeast mixture
Filling:
1 cup butter
1 cup sugar (white, raw or brown sugar)
1 cup bread crumbs
2 tbsp fresh milk
