The concept of eating rice in water took me a while to grasp, but I’m glad I tried!
Mustard oil is essential to this dish, but if you can’t handle it’s pungency, you can avoid it.

Ingredients for Poita Bhat:
2 cups leftover cooked rice
2-3 cups water (for soaking)
Salt to taste
1 tablespoon mustard oil
1 onion, finely chopped
1 green chili, finely chopped (optional)
A handful of fresh coriander leaves, chopped
Ingredients for Aloo Pitika:
4 medium-sized potatoes, boiled and peeled
2 green chilies, finely chopped
1 small onion, finely chopped
1 tablespoon mustard oil
Salt to taste
Instructions for Poita Bhat:
Take the leftover cooked rice in a bowl and add water to it. Leave itnto ferment overnight.
Add the finely chopped onion, green chili, salt and fresh coriander leaves to the rice. Mix everything together until well combined.
Drizzle some uncooked mustard oil over the poita bhat and mix well. The oil will add a distinct flavor to the dish.
In another mixing bowl, take the boiled and peeled potatoes. Mash them until you achieve a coarse texture
Add the finely chopped onion, green chili, and fresh coriander leaves to the mashed potatoes. Mix them together until well combined.
Season the mixture with salt according to your taste.
Drizzle some uncooked mustard oil over the Aloo Pitika and mix well.
Take a generous portion of the Poita Bhat and Aloo Pitika on a plate. Serve them together as a delightful combination.
