The artificial ripening process may cause the fruit sugars to not develop. This would mean the bananas taste is not as sweet.
Non-development of the fruit sugars also leads to the fruit being firm when pressed. even though it looks ripe.
Bananas are picked when green. Then artificially ripened after shipment by being gassed with ethylene. Calcium carbide is also used in some countries to artificially ripen green bananas.
Calcium carbide is a strong reactive chemical and is thought to contain some carcinogenic properties.
This chemical, when it encounters water, produces acetylene gas, this hastens the ripening process.
So Is it safe to eat, chemically ripened bananas?
While eating organic, naturally ripened fruit is always the healthier option. You should be fine, as long as you wash and peel the fruit before eating.
