Ingredients:
Fish bones for broth
1 lb salmon fillet, skin removed, cubed
1 onion, rough cut
Parsley, washed
Peppercorns
4 L water
4 carrots
2 potatoes, peeled, diced
5 mushrooms, washed, sliced
1 med yellow onion, diced
3 garlic cloves, chopped
1 chilli pepper, chopped
Salt
Starting with a simple seafood broth
Add fish bones like salmon, onions , 2 carrots , peppercorns to a pot with 4L cold water
Cut salmon filet into large cubes and set aside.
Peel and dice potatoes,
Peel and dice carrots, dice onions
Slice mushrooms, chop garlic, chop a chilli pepper.
Bring broth to a low simmer and remove any impurities that rise to the top.
Strain the soup into another pot. Bring to a simmer.
Add the vegetables to the broth and bring to simmer.
Cook just until the potatoes are cooked.
Add the salmon last and cook gently for about 10 min not to overcook the salmon.
Season to taste.
