Ingredients for the dough:

500g Bread Flour, Tipo 00 or All-purpose (11-12% protein)
7g Instant dry yeast
115g unsalted butter
245g warm fresh milk
100 g caster sugar
1 tsp salt
3 egg yolks
30g vegetable or sunflower oil

Ingredients for the filling:
30g Flour
60g bread crumbs
75g unsalted butter
130g brown/white sugar
80g fresh milk
Breadcrumbs for coating
