Sea urchin, or uni in Japanese, is one of the luxury sushi items. The yellow gonads inside, which is what you eat with relish, is like “edible gold from the ocean”. Depending on the area in the world though, the best season in America is from September through March, with a peak in winter. It is actually easier to prep than it looks.
