Low and slow roasted Tri Tip in a Dutch oven with homemade gravy, a must try recipe, absolutely delicious!

Recipe:
- 3,3 lbs/1,5 kg Tri Tip
- A little vegetable oil for seasoning, about 1-2 tablespoons
- Soy sauce for seasoning, about 1 tablespoon on each side
- Worcestershire sauce for seasoning, about 1 teaspoon for each side
- Yellow mustard for seasoning, about 1 tablespoon for each side
- Generous amount of salt and pepper
- 2 carrots cut in large chunks
- 2 onions cut in large chunks
- 2-3 celery sticks cut in big pieces
- 3-4 garlic cloves, peeled and crushed
- 2 sprigs fresh rosemary
- 3-4 sprigs fresh thyme
- A little butter
- 1 cup chicken or beef stock
- 2 teaspoons Dijon mustard
- Corn starch to thicken the sauce, I used 1 teaspoon dissolved in cold water
Cook in a preheated oven, no fan on 248F/120C. Stick in a meat thermometer after an hour, mine was set to 134F/57C. When ready let the roast rest for about 20-25 minutes.
