It's getting cold out and that means soups, lots of soups. One of the first soups I make in the fall is Italian sausage and white bean soup with kale. It's a bothy soup so it's lighter than most cold weather soups, but it's packed with flavor and eating with some nice sourdough just makes it even better.


8oz spicy italian sausage
2 cans white beans
3 stalks of celery
1 red onion
5 garlic cloves
1 bunch tuscan black kale
1 sprig rosemary
parsley leaves
kosher salt
black pepper
sherry vinegar
