Sinigang na Baboy or Pork Sinigang is a traditional Filipino soup made with pork, vegetables, and a sour broth. The sourness of the soup is achieved by adding tamarind or in the absence of tamarind, use kamias, guava, calamansi juice.
This dish includes pork ribs or pork belly, but other cuts of pork can also be used. The meat is boiled until it becomes tender and is then mixed with a variety of vegetables such as tomatoes, onions, okra, eggplant, and string beans (whatever you have in your fridge). The vegetables add both nutrition and texture to the dish.
