Makes 2 very large servings
Ingredients:
1/4 cup olive oil
1/4 shallot (I used yellow onion)
1 clove minced garlic
1/4 cup tomato paste
1 Tbsp vodka (optional)
1/2 cup heavy cream
1 tsp red pepper flakes
1/4 cup grated parmesan
Basil
Salt and pepper to taste
1 Tbsp butter
1/2 lb pasta (I used orzo)
1/4 cup reserved pasta water
Directions:
Heat a large pan over medium/medium-high heat. Add olive oil. While that heats, finely chop the shallot and garlic. Add to the pan an cook until translucent. Add tomato paste and stir well, breaking up the tomato paste. Cook until everything begins to caramelize. At this point add in the vodka if you are using it. Cook until it is nearly all evaporated. Add in cream and red pepper and remove from heat. Mix well and add salt and pepper to your taste.
Bring a pot of salted water to a boil and cook pasta according to package directions. Drain and reserve 1/4 cup of the water.
Add the pasta, water and butter to the pan. Mix well until the pasta is coated in the sauce. Add parmesan and sprinkle with fresh chopped or dried basil. Mix again until combined and serve.
