Pancit Bihon is rice noodles sautéed in vegetables and meat. This is a delicious dish and very popular on every occasions in the Philippines. This is one of my favorites and I can eat it anytime of the day. This is also perfect to match with lumpia’s and fried chicken.
Ingredients
8 oz rice noodles
8 oz Pancit canton
Half size medium cabbage
2 stalks of celery
1 medium size carrots
1/4 lbs of snow peas
Medium size onions
6 cloves of peeled garlic
1 lb of pork belly or protein of your choice
1/2 lb peeled shrimp
2 tbsp fish sauce
2 tbsp oyster sauce
1 tbsp soy sauce
2 tbsp chicken bouillon paste, or you can use Knorr bouillon cubes or 1 can of chicken stock.
1 tsp ground pepper
6 cups of water
Instructions for cooking
I recommend to use a large wok or a deep large pan to have enough room for mixing veggies and noodles.
Bring oil to the pan, add the pork and cook for 7 mins until golden brown and crispy.
Add the shrimp, cook for 3 mins. Add 1 tbs fish sauce and a pinch of ground pepper. And Set aside.
Using the same pan..
Bring oil to the pan and sauté onions and garlic until aromatic.
Add the celery and carrots
Add the snow peas and cabbage
Add seasoning, 1 tbsp fish sauce, 1 tbsp soy sauce and 1 tbsp oyster sauce and a pinch of ground pepper.
Cook for 5 mins depending on how you like your veggies cooked. I prefer mine well cooked and then set aside.
Again, using the same pan, add 3 cups of water, bring to boil. Add 2 tbsp of chicken bouillon paste and 1 tbsp of oyster sauce.
Add the rice noodles, cook for 3-5 mins and then add the Pancit canton. Cook for another 3 mins. Add 1 cup of water if needed to avoid drying of the noodles.
Keep stirring and loosen noodles to cook evenly. Check the texture, make sure the noodles is not watery and dry.
Once the noodles is cooked, add the veggies and protein.
Ready to serve and Enjoy!
