Riviera Seafood Club's own Claire Ito shows us how to prepare Hirame (pronounced heer-ah-mae) for usuzukuri sashimi - super thinly sliced. Our hirame, also known as olive flounder, is farmed in Korea.
This fish is a premium flat fish used almost exclusively for raw purposes. With an ultra clean taste and firm texture, hirame makes a great addition to the sushi table.
