Ingredients:
Chicken Stock - in a 16 quart stock pot
- 2 yellow onions
- 3 carrots
- 1 bunch parsley
- 4 bay leaves
- black & pink peppercorns
- salt
- water
- 2 whole chickens
Harissa
- 8 cups pearled barley
- salt
- white pepper
- shredded chicken (from the 2 whole chickens used in the stock)
- 12 quarts of chicken stock (if the amount you prepared is less than 12 quarts, add water)
Garnish
- cooked ground beef (seasoned with salt/pepper/allspice)
- melted butter
- Aleppo pepper
- cumin
- sumac
